Season with a little more salt and pepper, stir and cook for 2 minutes.Next, add in the red cabbage, balsamic vinegar, honey and a splash of water. Season again with salt and pepper, and gently stir everything together.Allow the cabbage to slowly simmer on the stove top for 30 minutes, stirring every so often. If the pan seems dry, add more water as needed (the water will evaporate as the cabbage cooks).Once the cabbage is tender and buttery, transfer to a serving dish and top with dollops of goat cheese and fresh chopped parsley. Enjoy!If you want to keep this recipe vegan, replace the butter for coconut oil, sprinkle in some sugar in place of the honey, and skip the goat cheese.
