Bread, butter, green chutney and a big stack of veggies in between - this Bombay sandwich is simple and healthy snack.

BOMBAY SANDWICH

Ingredients

8 white bread slices
1 medium cucumber, peeled
2 medium tomatoes
2 medium potatoes, boiled and peeled
2 medium onions, peeled
Butter as required
Coriander-mint chutney as required
Chaat masala for sprinkling
Crushed black peppercorns for sprinkling
Salt to taste
Potato chips for serving

Method

1. Cut cucumber, tomatoes, potatoes and onions into thin roundels.
2. Trim off the edges of the bread slices.
3. Apply some butter and coriander-mint chutney on one side of each bread slice.
4. To prepare one sandwich, place few cucumber roundels, onion roundels, tomato roundels and potato roundels on the chutney side of one bread slice. Sprinkle some chaat masala, crushed peppercorns and salt on top, cover with another bread slice with chutney side downwards and lightly press.
5. Cut into equal squares and serve with potato chips.
