Bombay Sandwich - Chef Ananya Banerjee

Bombay sandwich is a very popular wholesome sandwich that is loved by many. With generous amounts of lip smacking fresh green chutney and sliced veggies in it, this Indian vegetarian sandwich is an easy and hassle free all season snack. As the name suggests, this sandwich originated from Mumbai or Bombay as it used to be called before the renaming and can be found in restaurants and streets stalls of Mumbai.

INGREDIENTS
FOR BOMBAY SANDWICH MASALA:
• 1 tsp cumin seeds / jeera
• 1 tsp fennel seeds
• 2 tsp black pepper
• ½ inch cinnamon stick
• 1 tsp chaat masala
• ¼ tsp salt
FOR BOMBAY SANDWICH:
• 3 sandwich bread slices, white
• 2 tsp green chutney
• 2 tsp unsalted butter
• 8 slices potato, boiled and thinly sliced
• 4 slices tomato, thinly sliced
• 4 slices cucumber, thinly sliced
• 1 tsp sandwich masala
• 4 slices cooked beetroot, thinly sliced
• 4 slices onion, thinly sliced
• 2 tsp tomato sauce for garnishing

Method:
BOMBAY SANDWICH RECIPE:
1. Place 3 bread slices , butter them and and cut the edges.Spread green chutney to one bread slice..then place 4 slices of boiled potatoes over green chutney slice. sprinkle generous amount of bombay sandwich masala. Then place tomato slices and cucumber slices.
2. Cover it with butter bread slice facing butter side downwards. After that, spread green chutney over the bread slice. Then place beetroot slices. Followed by onion slices. Sprinkling sandwich masala in every step cover with the final butter slice facing the butter side downwards.
3. Cut into wedges and served. A grilled vertion is also made adding some grated cheese in the layers
