BLUEBERRY LEMON THYME CROSTATAS

Ingredients

1 cup fresh blueberries
2 lemons
2 teaspoons fresh thyme
250 grams short crust pastry dough
Refined flour for dusting
150 grams castor sugar
3 tablespoons cornflour
2 tablespoons fresh cream

Method

1. Dust the worktop with some flour, place the short crust dough and roll out into a semi-thick sheet.
2. Cut the sheet into roundels using a large size cookie cutter and lightly roll each roundel into thin discs, dusting with some flour. Place the roundels on a plate and refrigerate.
3. To prepare blueberry-lemon-thyme filling, take blueberries in a bowl. Add castor sugar and mix. Add cornflour and mix. Add cream and mix well.
4. Grate the lemon zest in the filling. Add thyme and mix well.
5. Place the discs on the worktop, put some blueberry mixture in the centre of each disc, apple some water on the edges and fold in the edges. Place the prepared crostatas on another plate and refrigerate for 10-15 minutes.
6. Preheat oven to 180° C. Line a baking tray with a parchment paper.
7. Place the crostatas on the lined tray. Put the tray in the preheated oven and bake for 40 minutes.
8. Serve warm.
