1 hairtail fish
Salt, as needed
Sudachi citrus, as needed

PREPARATION
1. Fillet the fish into 3 pieces. Cut each piece vertically into 3 strings.

2. Blade the fish (1).

3. Cook the bladed fish (2) on the grill until golden. Serve with the sudachi citrus.
