INGREDIENTS
1. Rice Flour - 1 Cup
2. Salt - 1 Teaspoon
3. Cumin Seeds - 1 Teaspoon
Let's see how to make a quick summer breakfast. Rice flour attu with mango juice is a great combination. We'll make mango juice first. Peel and dice the mango. Blend the mango pieces with sugar. Add water till required consistency is obtained. Blend till a juice of thick consistency is obtained. Put the juice aside. Lets prepare rice flour attu now. We can make this attu with just 3 ingredients. To a bowl add rice flour. Add 1 teaspoon cumin seeds, 1 teaspoon salt and mix. Add water and mix till dosa batter consistency is obtained. Make the batter a little thinner than dosa batter. The thinner the consistency of batter, the crisper the attu will be. Heat pan and spread oil on it. These can be made on a non stick pan as well as a normal pan. Pour the batter on the pan with a spoon. Don't spread it around with the spoon like a normal dosa. Sprinkle oil and put a lid on the pan. Cook on medium flame for 5 minutes. As the attu turns brown, flip it and put the stove on low flame. If you want the attu to be crisper, put it on stove for longer time. Attu is ready.
