Bhare Baghare Tamatar | Sanjeev Kapoor Khazana

Whole tomatoes stuffed with spicy mixture topped with cheese and cooked.

BHARE BAGHARE TAMATAR

Ingredients

8 medium firm red tomatoes, hollowed
3 tablespoons mozzarella cheese
1 tablespoon butter
2 teaspoons mustard seeds
2 teaspoons cumin seeds
½ teaspoon caraway seeds (shahi jeera)
½ teaspoon turmeric powder
8-10 curry leaves
2 teaspoons red chilli powder
1 tablespoon ginger-garlic paste
1½ tablespoons oil
2 medium onions, sliced
5-6 medium fresh button mushrooms, finely chopped
½ medium red capsicum, roughly chopped
Salt to taste
2 teaspoons coriander powder
½ teaspoon roasted cumin powder
2-3 tablespoons crushed peanuts
12 cashewnuts, halved
2 green chillies, chopped


Method

1. To make stuffing, heat butter in a non-stick pan, add 1 teaspoon mustard seeds, 1 teaspoon cumin seeds, caraway seeds, ¼ teaspoon turmeric powder, curry leaves, 1 teaspoon red chilli powder, ginger-garlic paste and mix well. Add ½ tablespoon oil and onions and sauté for a minute.
2. Add mushrooms and sauté for 2 minutes.
3. Grate mozzarella cheese on a plate.
4. Add red capsicum to the pan.
5. Stuff the base of the hollowed tomatoes with grated cheese reserving some for garnishing, add the prepared stuffing.
6. Heat remaining oil in a non-stick pan, add remaining mustard, cumin seeds, turmeric powder, red chilli powder and mix well. Add coriander powder, cumin powder, crushed peanuts and cashewnuts and green chillies and mix well. Add salt and place stuffed tomatoes. Cover and cook for 5-7 minutes.
7. Serve hot garnished with reserved cheese.
