Bhapa Alu | Chef Ananya Banerjee

Today’s video recipe is especially made for all my vegetarian friends and followers who have been waiting for a flavoursome dish recipe. I bring to you Bhapa Aloo, a simple yet delicious dish made with baby potatoes, paste of mustard seeds, coconut, green chillies and the blended 5 spices panch phoron steamed in Banana leaves. Sounds simple, right! You should definitely try this out if you want to get a feel of Bengali cuisines.

Ingredients:
• Baby Potatoes: 250 grams
• Panch phoron: ½ teaspoon
• Mustard paste: ½ teaspoon
• Grated coconut: 1 tablespoon
• Red chilies: 2 dry
• Finely chopped green chili: ½ teaspoon
• Turmeric powder: ½ teaspoon
• Yogurt: 1 tablespoon
• Lime juice: ½ teaspoon
• Mustard oil: 2 teaspoons
• Banana leaves
• Salt to taste
Method:
1. Par boil the potatoes and skin them.
2. Heat oil in a pan, add the Panchphoron, dry Red chilies and stir the till they splutter,now add potatoes and mix well. Keep aside.
3. Take mustard paste, curd, grated coconut, green chilli and turmeric powder in a bowl,mix well. 4. Gently mix the potatoes in the prepared paste. Add the salt to taste and lime juice, mix well.
4. Heat the banana leaves to make it pliable. Add the potato mixture in the middle close from all sides, secure it with a wooden toothpick. Place it in a steamer and steam for 6-7 minutes or Microwave it for 3-4 minute
