Lauki Raita

Ingredients
1 Calabash

1-1/2 cup Yogurt

5g Green Coriander

2 Green Chili

As per taste Salt

tsp Black Salt

1 tsp Roasted Cumin

1 tsp Red Chili Powder

1 tbsp Chaat Masala

Cooking Method

1- In a pan, add grated calabash and boil

2- In a bowl, add yogurt, boiled calabash, green coriander, green chili, salt, black salt and mix them

3- Use roasted cumin, red chili powder, chaat masala for garnishing

Mint Raita

Ingredients
5g Mint

2 Green Chili

1 tbsp Onion

3 cloves Garlic

1 tbsp Lemon Juice

As needed Water

1-1/2 cup Yogurt

As per taste Salt

tsp Black Salt

tsp Black Pepper Powder

1 tsp Whole Cumin

Cooking Method

1- Grind mint, green chili, onion, garlic, lemon juice, water

2- In a bowl, add yogurt, grinded paste (1-1/2 tbsp), salt, black salt, black pepper powder and mix them

3- Use cumin for garnishing

Cucumber Raita

Ingredients
1-1/2 cup Yogurt

3 tbsp Cucumber

5g Green Coriander

5g Mint

1 tsp Lemon Juice

2 tbsp Onion

1 tbsp Tomato

As per taste Salt

As needed Cooking Oil

1 tsp Whole Black Pepper

1 tsp Whole Cumin

1 tsp Mustard Seeds

1 tsp Curry Leaves

Method

1- In a bowl, add yogurt, cucumber chopped, green coriander, mint, lemon juice, onion, tomato, salt, black salt and mix it well

2- In a pan, add cooking oil, whole black pepper, whole cumin, mustard seeds, curry leaves, mixture and cook for a while then mix it

3- Use mint, green coriander, mustard seeds, roasted cumin for garnishing

Boondi Raita

Ingredients
1 cup Gram Flour

As needed Cooking Oil

1-1/2 cup Yogurt

As needed Water

As per taste Salt

1 tsp Sugar

tsp Black Pepper Powder

tsp Pomegranate Seeds

5g Mint

2 Green Chili

tsp Red Chili Powder

tsp Roasted Cumin

5g Green Coriander

Cooking Method

1- In a bowl, add gram flour, salt, water and mix until thickened

2- In a pan, add cooking oil and prepare boondi from the mixture

3- Now, soak them for 10 minutes, then fry them in cooking oil

4- In a bowl, add yogurt, fried boondi, salt, sugar, red chili powder (1/4 tsp), pomegranate seeds, mint, green coriander, green chili and mix it

5- Use red chili powder (1/4 tsp), roasted cumin, green chili for garnishing
