I've been told that it is best to make when the humidity is low.

As you can see it is very simple to make. I mention cooking it to 300 degrees F. but I actually stopped cooking it when it began to smoke. That's really the key. Then pour it quickly into a baking pan and spread it out as it tends to set up quickly.
