Gatte ki sabzi (Dry), A Recipe by Ragini Bhatanagar (Guest)
Gatte Ki Sabzi is a traditional dish from Rajasthan. This is a spicy mouth-watering dish that complements any meal. It is a savior too, on the days when no vegetables available at hand. This is an ideal preparation for journeys.

Ingredients
200 grams Yellow Gram flour
2 Onions (Big)
20-22 Garlic Cloves
2 ½ inch Ginger
2 tsp. Red Chili Powder
1 tsp. Turmeric
2 tsp. Coriander Powder
1 tsp. Garam Masala
1 Cup Coriander leaves (Chopped)
1 pinch Asafoetide
3 tbsp. Mustard Oil
Salt to taste.

Preparation of Dumplings (Gatta)
Add 1 tbsp. Mustard Oil, 1 pinch of Asafoetide, 1/2 tsp. Red Chili Powder, 1/2 tsp. Turmeric and a little salt in Gram flour and knead a hard-smooth dough with the help of little water. Now make thin rolls out of this dough, and add them in boiling water. Boil them for 10-15 minutes till the rolls float. Drain and wash the rolls with normal water and clean the foam. Cut the rolls into bite-size dumplings.
Make Onion, Ginger and Garlic paste.

Cooking
Heat 2 tbsp. Oil in a pan. Add Onion Paste Red Chili Powder, Coriander Powder, Turmeric and Salt. Fry this till the oil separates. Now add Gram flour Dumplings and mix properly. Now add Garam Masala, and sauté for 2 minutes on low heat.
Add Coriander leaves. It can be kept for more than 24 hours because it does not have curd and tomatoes.
