How to make Fried Eggplant or Begun Bhaja learn and cook smart with chef harpal singh sokhi. Begun bhaja is ridiculously simple to make. You smear thickly sliced brinjals in turmeric and seasoning, and fry them on medium heat in a skillet. The sugar in the marinade allows the brinjals to develop a wonderfully amber-coloured crust, and deepens the flavour of the dish. If you have 20 minutes to spare, give this recipe a try. Eat it along with steaming rice and dal, and you will not regret it.

Ingredients
• Ginger,Garlic - 1 Tbsp
• Salt to taste
• Turmeric Powder - 1/2 Tsp
• Red Chilli Powder - 1 Tsp
• Dry Mango Powder (Amchur Powder) - 1 1/2 Tsp
• Mustard Oil - 11/2 Tsp
• Brinjal - 1no
• Mustard Oil - 3 Tbsp
• Rice Flour - 1/2 Cup
Method:
1. Put a ginger garlic paste in a bowl, Add salt, Turmeric powder, Red chilli powder, Dry mango powder, Mustard oil and mix it well..
2. Take a Brinjal and Slice it in Roundels, and marinate with the mixture in the bowl.
3. Put some Mustard oil in a heating pan,
4. Take a plate and add Rice flour and coat each Brinjal slice with rice flour
5. Now Pan fry all the coated Brinjal slice and cover it
6. Flip in between and cook till crisp and golden brown from both the sides.
7. Drain the Brinjal slice on tissue paper in a plate.
8. 8.serve it with Tomato chutney and Enjoyy!
