Beef Nihari with Beef Kabab

Ingredients for Nihari Masala:
Fennel seeds 2 tbsp
Cumin seeds 2 tbsp
Curry leaf 1
Star anise 2
Nutmeg 2-3
Mace 2 tbsp
Cloves 10-12
Green cardamom 6
Black cardamom 2
Black peppercorns 1 tsp
Red chili powder 1 tbsp
Paprika powder 2 tbsp
Cinnamon sticks 2
Salt 1 tsp
Ground spices 1/2 cup

Ingredients for Nihari:
Oil 1 ½ cup
Onion (chopped) 1 cup
Ginger garlic paste 2 tbsp
Beef boneless 1 ½ kg
Water 5 cups
Flour mixture (roasted wheat flour 1 cup + water 1 cup)

Ingredients for Tari:
Oil 2-3 tbsp
Red chili powder 2 tbsp
Ginger (julienne) 2 tbsp

Ingredients for Beef Kabab:
Beef mince 1 kg
Onion (finely chopped & squeezed) 1 cup
Ginger garlic paste 1 tbsp
Green chilies (chopped) 2 tbsp
Green coriander (chopped) 1/2 cup
Red chili flakes 1 tbsp
Cumin powder 1 tbsp
Egg 1
Paprika powder 1 tbsp
Coriander powder 1 tbsp
Salt 1 tsp
Oil (for frying) as required

Directions for Nihari Masala:
1. In a grinder add fennel seeds, cumin seeds, curry leaf, star anise, nutmeg, mace, cloves, cinnamon sticks, green cardamom, black cardamom and grind into fine powder.
2. Transfer 1/2 cup ground spices, red chili powder, paprika powder, salt, turmeric powder and mix well. Your Nihari Masala is ready.
Directions for Nihari Preparation:
3. In a pot heat oil and add onion, cook until translucent. Add ginger garlic paste and cook for a minute.
4. Add beef and cook until it changes color. Add nihari masala and cook for 5 minutes.
5. Add water and cover and cook for 2 hours or until meat is fully done.
6. On a pan add wheat flour and roast until fragrant. Transfer it to a bowl and add water. Mix it well.
7. Add this flour mixture to nihari and cook for 10 minutes. Your Nihari is ready
Directions for Tari Preparation:
8. In a pan heat oil and add ginger and red chili powder. Cook for a minute.
9. Pour this Tari over Nihari and your Beef Nihari is ready.
Directions for Beef Kabab Preparation:
10. In a bowl add beef mince, onion, ginger garlic paste, green chilies, green coriander, cumin powder, egg, red chili flakes, paprika powder, coriander powder, salt and mix well. Refrigerate for 1 hour.
11. Now take the prepared mixture and make kababs.
12. Fry them from each side until fully done. Your beef kabab are ready.
13. Serve these beef kabab with Nihari and enjoy.
