Beef Jollof Rice

BEEF JOLLOF RICE

Serves 4

INGREDIENTS:
2 cups Rice
1 pound beef, diced
3 large tomatoes, sliced.
2 large onions, sliced
3 cloves of garlic
1 medium ginger
10 chilies
1 medium tin Tomato paste
1 tsp Curry powder
Vegetable oil
Salt

PREPARATION:
1. In a medium saucepan, add beef, onions, ginger paste, salt, beef seasoning, water and place on a medium high heat and cook for 15 minutes.
2. Blend tomatoes, onion, pepper, ginger and garlic together.
3. On a medium heat pour oil in a saucepan and fry cooked beef till golden brown, strain and set aside.
4. In the same sauce pan add the remaining sliced onions to the oil, stir and leave to sweat for 2 minutes.
5. Add tomato paste to onions and stir till evenly mixed and cook for 3 minutes
6. Add the blended ingredients and stir, leave to simmer for 10 minutes
7. Add curry, stir and leave to simmer for 2 minutes.
8. Add rice and stir in for a few minutes
9. Add the beef stock, add salt to taste, stir and leave to cook for 20 minutes checking regularly.
10. Add the fried beef, stir and let cook for 5 minutes to soften.

Ready to serve.
Serve with salad.
