Basic Gravy for Currys | Time saving Cooking l Cooking Hacks l Kitchen Tips by Hyderabadi Ruchulu

INGREDIENTS
1. Onions - 1/2 Kg
2. Tomatoes - 1/2 Kg
3. Ginger Garlic Paste - 4-5 Teaspoons
4. Chilli Powder - 5 Teaspoons
5. Salt - 4 Teaspoons
6. Turmeric Powder - 1 Teaspoon

This gravy could be used for 4-5 days if put in fridge or if put in freezer, it could be used for up to 1 month.
Heat 2 tablespoons oil. Fry chopped onions. Close the lid and fry. These could be cooked in a cooker also. Fry till onions become transparent. Add 5 teaspoons ginger garlic paste. Fry for 2-3 minutes. Add 1 teaspoon turmeric powder and mix. Add 1/2 kg diced tomatoes. Cook till tomatoes become soft and oil seeps out of them. Add 5 teaspoons chilli powder, 4 teaspoons salt and mix. Cook on low flame for 5 minutes. Here I didnít add any spices other than salt and chilli powder. Other spice could be added while making the curry. After gravy thickens, cut off the flame and let it cool down. Grind it into a paste and store it in a container. This could be used for 4-5 days if put in fridge or if put in freezer, it could be used for up to 20-25 days. Let's see a method to freeze it. Take an ice tray, fill it with the prepared paste and seal it with a plastic wrap. Freeze it. Let's see another method to freeze it. This could be freezed in a zip lock bag also. Fill the zip lock bag with the prepared paste, seal it without air and put it in the deep freezer.
After 1 day, we can see that the cubes froze. Take as many cubes as desired and cook the curry.

Let's see how to make potato green peas curry.
Heat 2 tablespoons oil. Add tempering. Here I used cumin seeds. Add diced potatoes, green peas. Let it cook for 5 minutes. Add chopped green chillies. Add prepared basic curry cubes. Here I used 3 cubes. Seal the rest of the cubes and put it back in the deep freezer. Mix. Add 1 cup water. Add desired spice. I used 1 teaspoon coriander seeds powder and 1 teaspoon coconut powder. After gravy thickens, sprinkle garam masala powder.

Let's see how to make tindoora curry.
Heat 1 tablespoon oil. Add cumin seeds, 2 green chillies, chopped tindoora and cook for some time. Add 2 teaspoons basic gravy curry. Add 1 cup water. Add 1 teaspoon sesame seeds and any other spices. This will be very useful for working women and bachelors.
