Bamboo shoots or bamboo sprouts are the edible shoots (new bamboo culms that come out of the ground) They are used as vegetables.Bamboo shoots are highly nutritious and contain a good amount of fiber, copper, and vitamins B6 and E in each serving. #BambooShootsCurry #ForestFood #NaturalFood #ChefHarpalSingh #TribalRecipeBamboo shoots and potato curry Preparation time 15 mins Cooking time 50 mins Serving 4 pax Ingredients Quantity Bamboo shoots 4-5 nos Salt as required + to taste Water for boiling +for grinding +for soaking Onion 3 nos Ginger 1 inch Garlic 6-8 pods Green chilli 4-5 nos Potatoes 2 nos Mustard oil 3-4 tbsp Hing a pinch Kashmiri red chilli whole 2 nos Fenugreek seed 1 tsp Kalonji 1 tsp Fennel seed 1 tsp Mustard seed ½ tsp Cumin seed 1 tsp Red chilli powder 2 tsp Turmeric powder 1 tsp Dry mango powder 1 ½ tsp Lemon juice 1 nos Method : 1. Remove the outer covering of the bamboo shoots , peel out the outer covering using peeler . 2. Once its thoroughly peeled , cut all the bamboo shoots into slices . 3. Heat a kadhai , add water , salt , bamboo shoots , allow it to cook for 20-25 mins on low flame 4. Now strain the bamboo shoots from the brine solution , wash it and allow it to boil again for 10 mins . 5. Meanwhile take onions , cut it into small cubes , take ginger and slice it , take garlic pods , green chillies , water and coarsely grind it using blender . 6. Now take potatoes and cut it into cubes , keep it a bowl , soak it in water . 7. Heat a kadhai , add oil , hing , kashmiri red chilli whole , fenugreek seed , kalonji , fennel seed , cumin seed allow it to splutter . 8. Now add the blended mixture and allow it to saute for 3-4 mins . 9. Now add potato cubes , bamboo shoots mix and sauté it well for 3-4 mins on low flame . 10. Now add salt , chilli powder , turmeric powder , dry mango powder mix it well for 2 mins . 11. Now add water and allow it to cover with a lid ,cook on low flame for about 20-25 mins . 12. Now add lemon juice , mix it well ,Transfer it in a serving bowl . 13.
