Baked Sweet Potato Tiramisu
Servings: 1

INGREDIENTS
1/2 baked sweet potato (yakiimo)

A
100ml heavy cream
1 tablespoon sugar

100g mascarpone cheese
1 slice castella
2 tablespoons instant coffee
Cocoa powder, as needed

PREPARATION
1. Cut the potato vertically. Scoop the potato out of skin.

2. Whisk heavy cream and sugar in a bowl. Add the mascarpone cheese into the bowl and stir just to combine.

3. Dissolve instant coffee in hot water. Wet the castella with coffee.

4. Put the castella (3) in the potato skin (1). Pour the cream (2) and dust some cocoa powder.

5. Enjoy!
