Everyone is wooing and eyeing for this cake. A no bake cheesecake that you can't go wrong. I love making this, everytime I bring it to a party or gathering everyone will be full of praise for this cake. And the best part is, it's so easy and simple to make!

No Bake Cheesecake

Makes one 9 inch (23 cm) cake

Ingredients:
For the crust
250 grams of digestive biscuit
120 grams of melted salted butter (Salted butter give more flavor in contrast with the cheese, of course you could use unsalted)

For the Cheesecake
500 grams of cream cheese (room temp.)
250 grams of whipping cream
1 tsp of vanilla extract
1 tbsp of lemon juice
60 grams of icing sugar

For the topping
About 250 grams of mixed berries

For the glaze/syrup
About 2 big tbsp of berry-flavored jam/jelly
1-2 tbsp of water

Directions

1) In a ziplock bag, add in digestive biscuit and crush them. You want it to look like very fine sand.
2) Transfer it to a bowl, add in melted butter. Mix well.
3) Grease a 9 inch (23cm) spring form pan and transfer the crust into the pan. Using a measuring cup, press down the crust firmly. You want to make sure that the crust is well packed so that it will not fall apart later. Set aside at the fridge while we make our cake
3) In a large bowl, add in cream cheese, vanilla extract, icing sugar and lemon juice and mix it really well until smooth. Set aside. You want it to be very smooth, creamy.
4) In another large bowl, add in whipping cream and whip until slightly thicken. You want your cream to be really cold so that later you could whip up easily.
5) Transfer the slightly thicken cream into your cream cheese mixture and beat until smooth, stiff, creamy, and fluffy. You want your mixture to be well incorporated and increase in volume.
6) Transfer the mixture into your pan and let it set for at least 5 hours in the fridge.
7) Top with some berries.
8) Heat the syrup in the microwave on high for about 30 seconds. Pour it over the cake and topping.
9) Served while it's cool!
