Bajji Majjiga Pulusu or spiced buttermilk with fritters in it. It is an authentic dish from the Indian cuisine. This recipe is also referred as Perugu Charu or Khadi Pakoda. A simple, refreshing and delicious delicacy goes well with steamed rice.Ingredients: • Curd - 1 Cup • Cumin Seeds - 1 Teaspoon• Green Chilies - 5 to 6 No’s• Coriander Leaves - a few strands• Coriander Powder - 1 Teaspoon• Turmeric Powder -1/2 Teaspoon• Onion - 1 Sliced• Green Chilies - 2 No’s• Curry Leaves - 2 Shoots• Mustard Powder - 1 TeaspoonIngredients for Bajji (fritters)• Chick Peas Flour - 1 Cup• Cumin Seeds - ½ Teaspoon• Onion - Finely chopped• Red Chili Powder - ½ Teaspoon• Salt - ½ Teaspoon• Coriander Powder - ½ Teaspoon• Water - as requiredIngredients for Tempering• Mustard Seeds - ½ Teaspoon• Cumin Seeds - ½ Teaspoon• Red Chilies - 2 to 3 No’s• Curry Leaves - 2 ShootsMethod of Preparation:• Take 1 cup Curd in a bowl add water to make it diluted buttermilk.• Add 1 tsp Cumin Seeds, 5 to 6 Green Chilies, a few strands of coriander and grind them.• After we grind them add it to the buttermilk to add flavour to it.• Now, take a wide pan add the buttermilk and bring it to the boil.• In meantime will prepare batter for bajji’s.• In a mixing bowl add ½ cup Chickpea flour, ½ Tsp Cumin Seeds, 1 big sized Onion sliced.• Add ½ a tsp Red Chili Powder, ½ a tsp Salt or as needed, ½ a tsp Coriander Powder and mix them all.• Add water and make it into a fine & thick batter.• When the buttermilk is boiling add 1 teaspoon of Mustard Powder, it is optional.• Let it boil for 2 to 3 more minutes.• Drop the batter in the buttermilk moulding them like fritters one after the other.• Let them cook for a while.• Add the left over batter along with some water to the buttermilk to get a thick consistency.• Let the bajji’s in the buttermilk cook well for 10 minutes on low-medium flame.• Now will, temper the Majjiga Pulusu.• Take a pan and heat 1 tbs ghee, oil can also be used.• Add ½ a tsp Cumin and Mustard Seeds each, let them splutter.• Add 2 to 3 Green Chilies and 2 shoots of Curry Leaves, let them splutter. Then, add this to the Majjiga Pulusu.• A flavourful and spiced Bajji Majjiga Pulusu is ready.
