Brinjals cooked with spring onions, tomatoes and masalas

BAINGAN CURRY

Ingredients

8 long brinjals (baingan)
5 spring onions
2 tbsps oil
1 tsp cumin seeds
½ tsp onion seeds (kalonji)
Salt to taste
1 tbsp chopped garlic
¼ tsp turmeric powder
½ tsp red chilli powder
1 tsp coriander powder
½ tsp cumin powder
1 cup chopped tomatoes
1 tbsp gram flour (besan)
3 tbsps yogurt

Method

1. Chop spring onion stems roughly. Halve the brinjals and chop them roughly.
2. Heat oil in a non-stick pan, add cumin seeds and onions seeds and saute. Add brinjals and mix. Add salt and mix. Cover and cook for 2 minutes.
3. Roughly chop spring onion bulbs.
4. Add garlic, turmeric powder, red chilli powder, coriander powder and cumin powder to the pan and mix well.
5. Add spring onion bulbs and stems and mix. Cover and cook for 2 minutes.
6. Add tomatoes and mix. Cover and cook for 2 minutes.
7. Add gram flour and mix. Add yogurt and mix. Cover and cook on medium heat for 10 minutes.
8. Serve hot.
