Baingan Bharta Toast | Sanjeev Kapoor Khazana

An open sandwich with tomato-ey eggplant topped with cheesy mozzarella. The perfect use for leftover Baingan ka Bharta!

BAINGAN BHARTA TOAST

Ingredients

Leftover bainganbharta as required
4-6 leftover bread slices
Olive oil or brushing
Tomato ketchup as required
Grated mozzarella cheese for topping
Coriander sprigs for garnishing

Method

1. Preheat oven at 180ÂșC.
2. Cut edges of bread slices and cut into triangles.
3. Brush some oil over bread triangles and put them onto a baking tray. Place the baking tray in preheated oven and bake for 5-7 minutes.
4. Fill in tomato ketchup in a piping bag.
5. Spread some bainganbhartaevenly over toasted breads. Pipe out some tomato ketchup over each bread and top with some cheese.
6. Place the baking tray in preheated oven and bake for 5-7 minutes or till cheese melts.
7. Serve hot garnished with coriander sprigs.

Preparation Time: 5-8 minutes
Cooking Time: 15-20 minutes
