Baingan Bharta Preparation time 10 mins Cooking time 10 mins Serving 4 pax Ingredients quantity Garlic 10-12 cloves Ginger 2 inch Green chilli 4 nos Onion 2 nos Mustard oil 3 tbsp +2 tbsp Kalonji 1 tsp Tomato 2 nos Turmeric powder ½ tsp Red chilli powder ½ tsp Salt to taste Roasted brinjal 2 nos Method : 1. In a grinding stone , add garlic cloves, ginger crush it nicely . 2. Simultaneously remove head of green chillies , roughly chop the onions. 3. Meanwhile heat a kadhai add oil , kalonji allow it to splutter . 4. Now add crushed ginger garlic and sauté it well for 30 seconds . remove from the flame . 5. Meanwhile crush the green chillies and add it into the kadhai and mix it well . 6. Simultanousely crush the onions nicely . 7. Now cut the tomatoes roughly and crush it nicely . 8. Keep the kadhai onto the flame and add turmeric powder , red chilli powder , salt , mix it well . 9. In a bowl , add crushed tomatoes , sauted mixture , crushed onions . 10. Now take the roasted brinjal , give a slit from middle , and remove the inner portion of brinjal with the help of spoon . 11. Roughly chop it and transfer it to the bowl . 12. Now take coriander leaves crush it nicely , add into the bowl . 13. Now add the remaining raw mustard oil , salt and mix it well . 14. Transfer it to serving bowl . 15. Ready to serve .
