Roti (flatbread) is coated in egg and fried to make this tasty dish. Try Baida Roti with anything you like!BAIDA ROTI - (Serves - 4)Ingredients 8 eggsSalt to taste Oil for drizzling Dough1 cup refined flourSalt to taste1 egg, whisked⅛ teaspoon baking powder1 tablespoon oilFilling 1 cup mutton mince 1 tablespoon oil 2 green chillies, chopped1 medium onion, chopped Salt to taste1 tablespoon chopped fresh coriander leaves¼ teaspoon garam masala powderMethod1. To make the dough, combine flour, salt and baking powder and oil, mix and knead into a soft dough. Cover with a damp muslin cloth and set aside for 15-20 minutes. 2. To make the filling, heat oil in a non-stick pan. Add green chillies and onion, mix and sauté till golden.3. Add mutton mince and salt, mix well and cook till the mutton is fully cooked and the mixture is dry. 4. Add coriander leaves and garam masala powder and mix well. Remove from heat and set aside. 5. Divide the dough into equal portions, shape into balls and roll each into 8 inch square roti.6. Beat eggs with salt. 7. Heat a non-stick pan and place a roti on it. Place a portion of the mince mixture in the center and pour two tablespoons beaten egg mixture on the mince. Fold in the sides to make a square packet.8. Pour some more beaten egg on the roti and drizzle some oil. Turn the stuffed roti and pour a little more of the beaten egg on it so that the egg coats it on all sides. Cook till golden and crisp from both sides.9. Cut into triangles and serve hot with green chutney.
