BAATI

Ingredients

1½ cups whole wheat flour
Salt to taste
¼ tsp carom seeds (ajwain)
½ tsp baking powder
2 tbsps ghee + for brushing
Melted ghee as required

Method

1. Take whole wheat flour in a large plate, add salt, carom seeds and baking powder and mix well. Add ghee, mix and add ¼ cup water or sufficient water to knead to a stiff dough. Cover with a damp muslin cloth and set aside for 10-15 minutes.
2. Divide the dough into equal portions, shape each portion into a ball.
3. Heat a gas-oven-tandoor, brush ghee, place the dough balls on it, cover and cook for 12-15 minutes.
4. Dip each bhati into melted ghee and drizzle with more ghee and set aside until use.
