BAATIIngredients1½ cups whole wheat flourSalt to taste¼ tsp carom seeds (ajwain)½ tsp baking powder2 tbsps ghee + for brushingMelted ghee as requiredMethod1. Take whole wheat flour in a large plate, add salt, carom seeds and baking powder and mix well. Add ghee, mix and add ¼ cup water or sufficient water to knead to a stiff dough. Cover with a damp muslin cloth and set aside for 10-15 minutes.2. Divide the dough into equal portions, shape each portion into a ball. 3. Heat a gas-oven-tandoor, brush ghee, place the dough balls on it, cover and cook for 12-15 minutes. 4. Dip each bhati into melted ghee and drizzle with more ghee and set aside until use.
