Avocado Ice Cream

SERVES: 6-8

INGREDIENTS
3 medium avocado
2 cups whipping cream
1 cup condensed milk
1 tbsp lemon juice
6 fresh mint leaves
1 tsp salt

DIRECTION
Cut and scoop the avocado into a blender.
Add lemon juice, mint, salt, condensed milk, blend into a smooth mixture and set aside.
Pour whipping cream into a mixing bowl and whisk with an electric whisk until it peaks and fluffy.
Add the pure avocado mixture to the whipped cream and gently stir in.
Pour into a container, cover and freeze for 4 hours or preferably overnight.
Mint avocado ice cream ready. Scoop into a glass, garnish with mint and serve.
