Avocado and Pistachio Ice Cream Sanjeev Kapoor Khazana

Most of us have known Pistachio ice-cream to be green. Now some more green of the avocado and a more creamier ice cream.

AVOCADO AND PISTACHIOS ICE CREAM

Ingredients

1 avocados
cup blanched pistachios, peeled and sliced + for sprinkling
cup condensed milk
1 tsp vanilla essence
1 cup whipping cream
Blanched and peeled pistachios for garnish

Method

1. Cut the avocado in half, discard the seed, and scoop out the flesh and add into a blender jar.
2. Add pistachios, condensed milk, vanilla essence, and whipping cream and blend to a smooth mixture. Transfer into an air tight container, sprinkle pistachios and lightly mix. Sprinkle some more of the pistachios, cover with a lid and place it in the freezer for 6-8 hours.
3. Scoop out the ice cream into serving bowls and serve garnished with blanched pistachios.
