Full recipe for AUREAure is cooked once a year in many Turkish homes to commemorate the Great FloodLegent has it, when Noahs Ark came to rest on Mount Ararat, his family cooked AURE using their last supplies to celebrate the new blessing of life ahead of them IngredientsGrains:500 g (2.5 cups) white wheat200 g (1 cup) rice800 mL canned chickpeas (drain the excess juice)550 mL canned white beans(drain the excess juice)5 L waterFruits:3 L water150 g (20-25) dried apricots100 g (7-8) dried figs150 g ( cup) raisins10-15 cloves2 cinnamon sticks2 oranges1 lemon (skin only)1 quince4-5 (550-600 g) apples2 pears1 peach1.7 kg sugar1 tsp saltThickener:500 mL water2 tbsp. flour2 tbsp. starchDecoration:1-2 tbsp cinnamon powder2 tbsp black currants cup shredded walnuts cup shredded pistachios cup shredded coconut1 cup pomegranate seedsOr any other natural seedsDirections:PRE-COOKINGOne day before;Wash and drain 500 g of white wheatBoil 5 L of water in a very large pot (10 L capacity)Once the water has boiled, add the wheat and turn down the heat to low-medium, cook for 1 hourOnce the wheat is thoroughly cooked, turn off the heat, cover the pot with a lid and rest for a minimum of 2 hours or overnight for better resultsPREPERATIONThinly dice the dried figs and apricots, set asideLightly grate the skin of the lemon and oranges to discard the bitter layerPeel their skin and dice them thinly, set asideDice the juicy flesh of the oranges, set asidePeel and dice the apples, the quince and the pears; submerge them in a bowl of water to prevent browning and set asidePeel and dice the peach, set asidePlace all the diced ingredients into separate bowls as they have various cooking timesPrepare the 5 L capacity Fruit Pot to cook the fruitsCOOKINGPlace the cinnamon sticks and cloves in a teabag, then, seal and place it into the fruit potAdd 3 L of water and boil for 10 minutesThen, add the fruits, based on cooking time;Add the driest and toughest fruits first, and the softer ones last, so nothing is overcookedBegin with the dried fruits; figs, apricots, and raisins(!) Wait for 3 minutes between each batch of dried fruitAdd the diced lemon and orange skins, the quince, the oranges, the apples, the pears, the peach waiting 2 minutes between each batch of fresh fruitBoil the fruits together for 3-5 minutes more, until all the fruits become soft and tenderWe can now add 1.7 kg of sugar and 1 tsp of saltLet the mixture simmer for 10 more minutes at low heatMeanwhile, reheat the wheat in the 10 L- Grain Pot (from the day before)Add 800 mL of canner chickpeas (! drain the excess juice of the can) and 200 g of riceCook for 6-8 minutes; until the rice becomes softAdd 550 mL of canned white beans (! drain the excess juice of the can) and simmer grains/legumes together for 8-10 minutesOnce the fruits and grains are cooked well, combine all the ingredients in one very large pot (10 L capacity pot)THICKENERIn a bowl, mix 2 tbsp of corn starch, 2 tbsp of flour, and 500 g of waterWhisk rigorously for a smooth mixtureDrizzle the thickener into the Fruit-Grain pot, stirring continuously to avoid any clumpsSimmer the AURE for 10 more minutes while stirring every now and thenThen, turn off the heatSERVINGApportion the AURE into serving bowls while it is still hot!Choose presentable bowls and leave 0.5 cm space from the rim for decorationLet the bowls cool down to room temperature for a couple of hours or overnightDECORATIONNow, the fun part!
