AURE (A-SHOO-RE); NOAHS PUDDING: A LEGENDARY DESSERT TO CELEBRATE THE SALVATION OF GREAT FLOOD

Full recipe for AURE
Aure is cooked once a year in many Turkish homes to commemorate the Great Flood
Legent has it, when Noahs Ark came to rest on Mount Ararat, his family cooked AURE using their last supplies to celebrate the new blessing of life ahead of them

Ingredients

Grains:
500 g (2.5 cups) white wheat
200 g (1 cup) rice
800 mL canned chickpeas (drain the excess juice)
550 mL canned white beans(drain the excess juice)
5 L water

Fruits:
3 L water
150 g (20-25) dried apricots
100 g (7-8) dried figs
150 g ( cup) raisins
10-15 cloves
2 cinnamon sticks
2 oranges
1 lemon (skin only)
1 quince
4-5 (550-600 g) apples
2 pears
1 peach
1.7 kg sugar
1 tsp salt

Thickener:
500 mL water
2 tbsp. flour
2 tbsp. starch

Decoration:
1-2 tbsp cinnamon powder
2 tbsp black currants
cup shredded walnuts
cup shredded pistachios
cup shredded coconut
1 cup pomegranate seeds
Or any other natural seeds

Directions:

PRE-COOKING
One day before;
Wash and drain 500 g of white wheat
Boil 5 L of water in a very large pot (10 L capacity)
Once the water has boiled, add the wheat and turn down the heat to low-medium, cook for 1 hour
Once the wheat is thoroughly cooked, turn off the heat, cover the pot with a lid and rest for a minimum of 2 hours or overnight for better results

PREPERATION
Thinly dice the dried figs and apricots, set aside
Lightly grate the skin of the lemon and oranges to discard the bitter layer
Peel their skin and dice them thinly, set aside
Dice the juicy flesh of the oranges, set aside
Peel and dice the apples, the quince and the pears; submerge them in a bowl of water to prevent browning and set aside
Peel and dice the peach, set aside
Place all the diced ingredients into separate bowls as they have various cooking times
Prepare the 5 L capacity Fruit Pot to cook the fruits

COOKING
Place the cinnamon sticks and cloves in a teabag, then, seal and place it into the fruit pot
Add 3 L of water and boil for 10 minutes
Then, add the fruits, based on cooking time;
Add the driest and toughest fruits first, and the softer ones last, so nothing is overcooked
Begin with the dried fruits; figs, apricots, and raisins
(!) Wait for 3 minutes between each batch of dried fruit

Add the diced lemon and orange skins, the quince, the oranges, the apples, the pears, the peach waiting 2 minutes between each batch of fresh fruit
Boil the fruits together for 3-5 minutes more, until all the fruits become soft and tender
We can now add 1.7 kg of sugar and 1 tsp of salt
Let the mixture simmer for 10 more minutes at low heat

Meanwhile, reheat the wheat in the 10 L- Grain Pot (from the day before)
Add 800 mL of canner chickpeas (! drain the excess juice of the can) and 200 g of rice
Cook for 6-8 minutes; until the rice becomes soft
Add 550 mL of canned white beans (! drain the excess juice of the can) and simmer grains/legumes together for 8-10 minutes
Once the fruits and grains are cooked well, combine all the ingredients in one very large pot (10 L capacity pot)

THICKENER
In a bowl, mix 2 tbsp of corn starch, 2 tbsp of flour, and 500 g of water
Whisk rigorously for a smooth mixture
Drizzle the thickener into the Fruit-Grain pot, stirring continuously to avoid any clumps
Simmer the AURE for 10 more minutes while stirring every now and then
Then, turn off the heat

SERVING
Apportion the AURE into serving bowls while it is still hot!
Choose presentable bowls and leave 0.5 cm space from the rim for decoration
Let the bowls cool down to room temperature for a couple of hours or overnight

Now, the fun part!
