Aruk: Iraqi-style Latkes with Einat Admony

Naomi is back with world-renowed Israeli chef, Einat Admony. Einat is here to bring recipes from her brand new cookbook, Shuk, which explores eperiences from markets all over Israel as well as flavors from Einat's childhood. Today, she's showing Naomi how to create Aruk, or Iraqui-style herb and potato latkes. Packed with flavor and easy to make by hand, these might just be your new latke staple.

Get the recipe:
Aruk
3 medium russet potatoes, (about 1 and 1/2 pounds/680 grams total)
1 large yellow onion
2 tablespoons all-purpose flour
vegetable or olive oil, for frying
freshly ground Gefen Black Pepper
1 tablespoon kosher salt
1 and 1/2 teaspoons baharat, store-bought or homemade
1 teaspoon sweet paprika
1 teaspoon Gefen Ground Cumin
3/4 cup (30 grams) chopped fresh cilantro
3/4 cup (30 grams) chopped fresh parsley
1/4 cup (25 grams) chopped scallions
2 large eggs, lightly beaten
