ngredients:
10 to 15 Arbi pieces
Oil for deep frying
Salt to taste
1/2 tsp Dhania Powder
1/2 tsp red chilli powder
1/2 tsp amchoor powder
1 tsp chaat masala.


Procedure:
Wash the arbi well under running water and put in a pan. Add enough water to cover all arbi and place on flame. Boil the arbi for 10 to 15 minutes till soft. You can prick with a knife to check if cooked. Once boiled turn off flame, drain out the water and allow to cool a bit. When they are just warm peep each arbi and cut into halves vertically and keep aside. When all are done, heat oil in a kadhai ( about one third of the kadhai. When oil is hot, slowly put in arbi pieces one by one, put asmany as can be comfortably turned around. Fry turning the pieces around. When they are light golden in colour , with a sieve take them out on a issue , draining out all excess oil. . Now with you palm flatten each arbi piece and put back into the oil. Once again fry for a few minutes, turning around, till each piece is rich golden brown in colour and crisp. Remove with sieve draining out excess oil and place on a tissue. Fry all remaining arbi pieces in the same way. Now sprinkle all the dry spices over all the pieces and serve hot with kadhi chawal, dal chawal or even just as a snack with green chutney or ketchup.
