Make a fresh batch of jam with apricots in your kitchen, spread it on toasted breads and enjoy.

APRICOT JAM

Ingredients

20-25 golden apricots
½ cup sugar
1½ cups orange juice
2 inch cinnamon stick
1 star anise
2 green cardamoms

Method

1. Soak apricots in sufficient water for 6-8 hours.
2. Heat a nonstick pan. Drain the apricots and transfer in the pan. Add sugar, orange juice and mix well.
3. Once the mixture comes to a boil, add cinnamon, star anise, green cardamoms and mix well. Cook on medium heat fo1 10-15 minutes.
4. Discard the scum and remove the whole spices. Blend coarsely.
5. Allow to cool and serve.
