Apple Yogurt Salad | Sanjeev Kapoor Khazana

Fresh apple salad with creamy yogurt dressing. Refreshing indeed !

APPLE YOGURT SALAD

Ingredients

2 medium green apples
2 medium red apples
1 medium carrot, cut into 1 inch thin strips
15-20 fresh mint leaves
12-15 pecan nuts
Few lollo rosso lettuce leaves
Dressing
½ cup yogurt
4 tablespoons poppy seeds (khuskhus), soaked for 6-8 hours
2 tablespoons honey
2-3 tablespoons apple cider vinegar
Salt to taste
Crushed black peppercorns to taste

Method

1. To prepare dressing, combine yogurt, drained poppy seeds, honey, apple cider vinegar, salt and crushed peppercorns in a jar and blend using an electric hand blender till smooth.
2. Deseed and chop green apple and red apple and transfer in a bowl.
3. Add carrot strips, mint leaves, pecan nuts, 1-2 torn lollo rosso lettuce leaves and dressing and toss well.
4. Serve immediately.
