But, apple version is nothing but a simple, delightful rendition of the quintessential pasta.APPLE PASTAIngredients 1 medium red Washington Apple 2 cups boiled penne pasta1 tbsp olive oil Juice of ½ lemon1 tbsp chopped garlic 4-5 button mushrooms, sliced ¼ cup mixed capsicum diamonds (red, yellow and green)4-6 baby corn, diagonally sliced and blanchedCrushed black peppercorns to taste 1 tsp red chilli flakesSalt to taste ¼ medium broccoli, cut into small florets and blanchedMethod1. Heat olive oil in a non-stick pan. 2. Deseed and cut the Washington Apple into small pieces and grind into smooth puree. Add lemon juice and mix well. 3. Add garlic to hot olive oil and sauté for 30 seconds. Add mushrooms, mixed capsicums and baby corn and sauté for 1 minute. 4. Add pasta and toss. Add crushed peppercorns and chilli flakes and toss again. Add salt and toss well. 5. Add broccoli florets and toss. Add apple puree and toss well.
