Apple Kheer Recipe - How To Make Apple Khir - Seb ki kheer | Nisha Madhulika

Apple Kheer prepared with thickened milk and caramelized apple tastes super delicious and can be consumed while fasting. Seb kheer is prepared with very few ingredients.

Ingredients

Apple – 2
Sugar - ½ cup
Raisins – 1 tbsp
Cashews – 10 to 12
Almonds – 10 to 12
Pistachios – 10 to 12
Green cardamom – 4 to 5
Milk – 1 litre (5 cups)

Directions

Getting ready:

1. Soak the almonds in a bowl filled with hot water for 10 to 15 minutes. Later, peel and thinly slice them as well as pistachios and chop the cashews. Stone grind the green cardamom seeds.

Making:

2. Start with simmering the milk in a vessel until the milk reduces to half of its quantity.

3. In the meantime, roast the apple in another pan by stirring rigorously until colour changes slightly. Afterward, add the sugar to the apple and again cook by stirring continuously till the sugar dissolves completely.

4. Once the apple and sugar turn golden brown, turn off the flame and by the time milk will be reduced as well. Add the apple mixture in the milk followed by raisins, cashews, some almonds and some pistachios while stirring the milk constantly. After a while, turn off the flame and mix crushed green cardamom in the kheer. Transfer the kheer in a bowl, apple kheer is ready.

Serving:

5. Garnish this luscious and nutritious apple kheer with almonds and pistachios and serve warm or chilled.

Suggestion

We have roasted the apple separately because it has some acidic component due to which the milk will curdle if raw apple is added to it. Instead of roasting the apple separately, you can add a pinch of baking soda in the boiling milk then cook until the milk reduces to half of its quantity. Later, add the raw apple to the milk and cook by stirring constantly till it starts boiling again.
