Apple Braid is a unique dessert dish, which looks beautiful and tastes even better!

APPLE BRAID

Ingredients

½ medium green Washington Apple
200 gms puff pastry dough
2 tsps oil
1 large onion, sliced
½ fresh rosemary sprig
2 tbsps toasted pinenuts
½ tsp castor sugar
Salt to taste
Crushed black peppercorns to taste
Refined flour (maida) for dusting
Butter for greasing
50 gms brie cheese
1 egg

Method

1. Preheat oven to 180°C.
2. Halve, deseed and thinly slice Washington Apple.
3. Heat oil in a non-stick pan. Add onion and sauté on high heat till golden brown.
4. Finely chop rosemary leaves, add to sautéed onion along with pinenuts and sauté. Add castor sugar and sauté till onion caramelizes.
5. Add sliced apple, mix and cook for 1 minute. Add salt and pepper powder and toss well. Transfer on a plate and cool.
6. Dust the worktop with some flour and roll out the puff pastry dough into ½ cm thick rectangle sheet, dusting with some flour.
7. Grease a baking tray with some butter and place the sheet.
8. Make light markings lengthwise on the sheet leaving 1 inch from both sides.
9. Put onion-apple mixture in the center. Cut brie cheese into small pieces and put on top of onion-apple mixture.
10. Trim 1 inch from the corners of the sheet, discard the excess dough and further make slant cuts using a pizza cutter on both sides.
11. Fold in the slant strips from both sides alternatively, applying some water. Fold in the remaining ends and press to seal.
12. Break an egg in a bowl and brush some on top of prepared apple braid.
13. Put the tray into the preheated oven and bake for 15-20 minutes. Remove from oven and slightly cool.
14. Cut into pieces and serve warm.
