ANDHRA STYLE CHICKEN PICKLEIngredients500 grams chicken on the bone, cut into 1 inch pieces½ tsp turmeric powder1 tsp red chilli powder1 tbsp ginger-garlic pasteOil for deep fryingMasala2 tbsps oil2 tbsps ginger-garlic paste¼ tsp turmeric powder¼ cup red chilli powder1 tbsp mustard powder¼ tsp fenugreek powder½ lemonTempering 2 tbsps oil1 tsp fenugreek seeds (methi dana)4-5 dried red chillies10-12 curry leavesSalt to tasteMethod1. Take chicken in a large bowl, ad turmeric powder, red chilli powder and ginger-garlic paste and mix well. Set aside to marinate for 30 minutes. 2. Heat sufficient oil in a kadai. Slide in the chicken pieces a few at a time and deep fry on medium heat till golden brown and crisp. Drain on an absorbent paper. 3. To make the masala, heat oil in a non-stick pan. Add ginger-garlic paste and sauté for 1-2 minutes. 4. Add turmeric powder, red chilli powder, mustard powder, and fenugreek powder and mix well. Cook for 1-2 minutes.5. Add the fried chicken and mix well. 6. To make the tempering, heat oil in another pan. Add fenugreek seeds, dried red chillies, and curry leaves and mix well. Sauté for 20 seconds and transfer this into the chicken mixture and mix well. Add salt, mix and take the pan off the heat. Allow to cool.7. Squeeze the juice of lemon and mix well. Set aside for 2-3 days.8.
