ANDHRA STYLE CHICKEN PICKLE

Ingredients

500 grams chicken on the bone, cut into 1 inch pieces
½ tsp turmeric powder
1 tsp red chilli powder
1 tbsp ginger-garlic paste
Oil for deep frying
Masala
2 tbsps oil
2 tbsps ginger-garlic paste
¼ tsp turmeric powder
¼ cup red chilli powder
1 tbsp mustard powder
¼ tsp fenugreek powder
½ lemon
Tempering
2 tbsps oil
1 tsp fenugreek seeds (methi dana)
4-5 dried red chillies
10-12 curry leaves
Salt to taste

Method

1. Take chicken in a large bowl, ad turmeric powder, red chilli powder and ginger-garlic paste and mix well. Set aside to marinate for 30 minutes.
2. Heat sufficient oil in a kadai. Slide in the chicken pieces a few at a time and deep fry on medium heat till golden brown and crisp. Drain on an absorbent paper.
3. To make the masala, heat oil in a non-stick pan. Add ginger-garlic paste and sauté for 1-2 minutes.
4. Add turmeric powder, red chilli powder, mustard powder, and fenugreek powder and mix well. Cook for 1-2 minutes.
5. Add the fried chicken and mix well.
6. To make the tempering, heat oil in another pan. Add fenugreek seeds, dried red chillies, and curry leaves and mix well. Sauté for 20 seconds and transfer this into the chicken mixture and mix well. Add salt, mix and take the pan off the heat. Allow to cool.
7. Squeeze the juice of lemon and mix well. Set aside for 2-3 days.
8. Serve.
