An ultra-flavourful mutton fry recipe that comes from Andhra Pradesh and is super comforting to enjoy. It gets ready quickly so you can make and serve it to your loved ones.

ANDHRA MUTTON FRY

Ingredients

750 grams mutton, cut into 2 inch pieces on the bone and boiled with salt and turmeric powder
2 medium onions, roughly chopped
1 inch ginger, roughly chopped
6-8 garlic cloves
10-12 black peppercorns
1 tsp fennel seeds
1 tsp coriander seeds
4-5 dried red chillies, stemmed
2-3 tbsps oil
3-4 green chillies, slit
2 sprigs of curry leaves
2 tsps red chilli powder
¼ tsp turmeric powder
½ tsp garam masala powder
½ lemon
2 tbsps chopped fresh coriander leaves

Method

1. Transfer onions, ginger, garlic, black peppercorns, fennel seeds, coriander seeds and dried red chillies in a blender jar. Add ¼ cup water and grind to fine paste.
2. Heat oil in a kadai. Add green chillies, prepared paste and sauté for 3-4 minutes on medium heat or till oil separates.
3. Add curry leaves and mix well. Add the boiled mutton and mix well.
4. Add red chilli powder, turmeric powder and garam masala powder. Squeeze lemon and mix well. Cook on medium heat for 4-5 minutes.
5. Adjust salt and add coriander leaves and mix.
6. Serve hot.
