A recipe to outrank your usual supper curries and enjoy the meal even more. Anda Malai Masala, hard boiled eggs cooked in flavourful and spicy onion gravy, served best with pavs or paranthes.

ANDA MALAI MASALA

Ingredients

4 eggs, hard boiled
2 small onions, peeled
3-4 green chillies
3 tbsps oil
1½ tsps cumin seeds
1½ tbsps ginger-garlic paste
Crushed black peppercorns to taste
1½ tsps garam masala powder
Salt to taste
¼ tsp turmeric powder
½ cup milk
3 tbsps fresh cream
2 tbsps freshly chopped coriander leaves
Coriander leaves for garnish
Pavs to serve

Method

1. Cut onions in quarters, de-stem green chillies and transfer into a blender jar. Blend to a fine paste.
2. Heat oil in a non-stick pan, add cumin seeds and allow the colour to change. Add the prepared paste and mix well. Cook till it turns golden brown, sautéing occasionally.
3. Add ginger-garlic paste and mix well. Cook for 1-2 minutes.
4. Add crushed black peppercorns, garam masala powder, salt, turmeric powder and ¼ cup water. Mix well, add ½ cup water, mix.
5. Cut eggs in half and add them in the pan. Mix well. Add milk and mix well. Cook for 2-3 minutes.
6. Switch the heat off. Add fresh cream and chopped coriander. Transfer into a serving plate, drizzle a little cream on top.
7. Garnish with coriander leaves and serve hot with pavs.
