A tasty dish of eggs and mutton liver cooked with masalas ANDA KALEJI TAK-A-TAKIngredients6 hard-boiled eggs, peeled200 gms mutton liver (kaleji), boiled and cut into ½ inch pieces2 medium onions3 tbsps oil1 tsp cumin seeds2 tbsps ginger-garlic paste4 medium tomatoes, finely chopped2 green chillies1 tsp red chilli powder½ tsp turmeric powder2 tsps coriander powderSalt to tasteA few sprigs of fresh coriander leaves1 inch ginger, cut into thin stripsMethod1. Roughly chop onions in a chopper.2. Heat oil in a non-stick pan, add cumin seeds and onions and saute.3. Roughly chop eggs.4. When the onions turn golden, add ginger-garlic paste and mix. Add mutton liver and mix. Add tomatoes. Finely chop green chillies and add. 5. Add red chilli powder, turmeric powder and coriander powder and mix well and saute for ½ minute. Add 1 cup water and mix well. Add salt and mix and cook. 6. While stirring tap the ladle over the liver to cut them into small pieces.7. Chop coriander leaves. 8. Add eggs and mix. Add coriander leaves and again tap the ladle over the pieces and cook for 2-3 minutes.9.
