Amritsari Fish Fry Recipe – Crispy Fried Fish Recipe: Cooking a tender meat like that of a fish requires some patience and tender hands.

1. Marinate:
Ginger (2 tsp) and Garlic (1 tbsp): G-G paste
Cut the Fish fillet (500 gms) diagonally. Add salt and squeeze ½ lemon, add ½ of G-G paste and red chillipowder(1 tsp). Marinate and keep for 20 minutes.
2. Batter:
In a separate bowl, take Gram flour(2 tbsp), Refined Flour (1 tbsp), the remaining ½ of G-G Paste, Red Chilli Powder (2tsp), Egg White (1 egg), Carom Seeds (roasted and crushed - 1/2 tsp), Vinegar (2 tsp), Garam Masala (1 tbsp), Chaat Masala (1 tsp) and salt. Mix and make smooth paste by adding some water.

Add marinated fish and cover the pieces with the batter properly.

Heat Oil in a pan, and deep fry the fish pieces on medium heat. Remove when the crust gets golden brown, cut and see if the fish has retained its moisture - remember to not fry on high heat as the moisture will be lost and the fish will become dry.

Sprinkle Chaat Masala. Serve hot with onion rings and lemon wedges.
