INGREDIENTS:-

AMRITSARI CHOLE/KALE CHOLE/PUNJABI CHOLE/CHANA MASALA

FOR BOILING:
2 cups kabuli chana/chole(soaked overnight in enough water)
2 tea bags or 2 tsp tea tied in a muslin cloth
Salt to taste
a piece of cinnamon stick/dalchini
2 whole black cardamom/kali illaichi
a bayleaf/tejpatta

FOR DRY ROAST & GRIND:
1 tsp cumin seeds/jeera
2 green cardamom/hari illaichi
1 black cardamom/kali illaichi
1/2 tsp fennel seeds/sauf
1/2 tsp blackpeppercorns/kalimiri
a small piece of cinnamon/dalchini
4-5 cloves/long
1 tbsp coriander seeds/saboot dhania
1 staranise/phool chakri
1 mace/javitri
2 tsp dry pomogranate seeds/anardana

FOR GRAVY:
3-4 tbsp oil/ghee
1/4 tsp asafortida/heeng
1/2 tsp cumin seeds/jeera
a bay leaf/tejpatta
2 green chillies slit
2 onion finely chopped
1 big onion pureed
1 tbsp ginger garlic paste/crushed
2 tomatoes chopped
Salt to taste
1/2 tsp dry mango powder/aamchoor powder
2 tsp lemon juice
some fresh coriander
some ginger julliens, onions & tomato to garnish.

BHATURA:
1.5 cups all purpose flour/maida around 200 gms
1-2 tbsp fine suji/semolina
1 tbsp ghee/oil
1 tsp powdered sugar
1/2 tsp salt or as required
4 tbsp yogurt
1/4 tsp baking soda
Water to knead
Oil for frying
