Nutrilite Amritsari Chole kulche

Ingredients Quantity

For kulche

Refined flour 2 cup + for dusting + for layering
Baking powder ¼ tsp
Baking soda ¼ tsp
Salt to taste + to taste
Sugar 1 tsp
Curd ¼ cup
Lukewarm water as required
Oil 1 tsp
Nutrilite probiotic butter (100g)for layering
Nutrilite probiotic butter (1/2 kg slab) for greasing

For stuffing

Coriander seed 1 tbsp
Cumin seed 1 tsp
Boiled potatoes 3 nos
Onion chopped 1 nos
Green chilli 2-3 nos
Coriander leaves 1 tbsp
Red chilli powder ½ tsp
Chaat masala ½ tsp

For chole

Coriander powder 1 tbsp
Chole masala 2 tbsp
Red chilli powder 1 ½ tbsp
Mint powder ½ tsp
Turmeric powder ¼ tsp
Ajwain 1 tsp
Chaat masala 1 tsp
Salt to taste
Green chilli slit 4-5 nos
Ginger julienne 1 inch
Bayleaf 2 nos
Boiled kabuli chana 3 cup
Nutrilite probiotic butter ½ slab
Oil 1 tsp
Tomato wedges 2 nos
Chana extracted water 1 cup

Method :
For kulcha dough
1.In a parath , using hand seiver , add refined flour , baking powder , baking soda , salt sieve it nicely .
2.Now add sugar , curd mix it well .
3.Now add lukewarm water and make a semi soft dough .
4.Now apply oil over the dough , cover it with a moist muslin cloth allow it to rest for 1 hour .

For kulcha stuffing
5.Heat a kadhai , add coriander seed , cumin seed and dry roast it for about 2 mins .
6.In a blender add the roasted spices and coarsely grind it , keep it aside 7.In a bowl , add potato and mash it nicely using masher .
8.Now add onion , green chilli , coriander leaves , roasted crushed spices ,salt , red chilli powder , chaat masala , mix it well and keep it aside . For

making amritsari chole
9.In a bowl , add coriander powder , chole masala , red chilli powder , mint powder , turmeric powder , ajwain , chaat masala , salt , green chilli slit ,ginger julienne , bayleaf , boiled kabuli channa mix it well .
10.In a kadhai , add nutrilite probiotic butter , oil allow it to heat .
11.Now add marinated chana , sauté it well for 4-5 mins .
12.Alternatively slightly mash the chana using masher .
13.Now add tomato wedges saute it and mix it well .
14. Now add the Kabuli chana extracted water and Cover it with a lid allow it to cook it for 10-15 mins .
15. Once the curry is ready ,keep it aside .

Making of kulcha
16. Now dust the flour on working table , take the dough and flatten it using finger tip .
17.Apply apply nutrilite probiotic butter all over the flatten dough , sprinkle refined flour over it and make an envelope fold .
18.Now apply nutrilite probiotic butter on top again on the rectangle dough , sprinkle refined flour and roll it in circular motion ,and cover its edges through pinch fold .
19.Cut the roll into 4-5 equal sizes balls , tuck the open butter side inside and make balls
20.Transfer the balls in parath , Cover it with a moist muslin cloth , allow it to rest for 10-15 mins .
21.Now take the fillings and make small balls out of it .
22.Now roll the balls in dry flour and make the balls into disc shape with the help of finger tips , place the filling in the centre .
23.Pull back and pleat the balls , seal it to make them back into dough balls .
24. Repeat the same process with the other balls as well .
25.Roll them softly on a surface into 6-7 inches disc , sprinkle some water over it .
26.With the help of finger tip make impressions on the disc , sprinkle some coriander leaves over it .
27. Preheat the oven at 180 degree celsious for about 15 mins .
28. In a baking tray , apply oil all over , place the kulcha over it and bake it at 180 degree celsious for 10-12 min .
29. Meanwhile take a gas , heat iron tawa over it .
30. Simultanousely using wooden roller , Roll them softly on a surface into 6-7 inches disc .
31.Now place the kulche on the tawa which has more stuffing appeared and cook it for 30 seconds on high flame .
32.Remove it from the flame , apply water on the uncooked side and again place it on to the tawa .
33.Cook it for 30 seconds and then take the tawa and cook the kulcha on open flame for about 2 minutes on medium flame .
34. Once the kulcha gets coloured then put the tawa on flame to cook the kulcha completely .
35.Transfer the kulcha in a plate , grease the kulcha with nutrailite probiotic butter nicely .
36.Crush between palms .
37.In a serving bowl , take amritsari chole, accompany with sliced onion , mint chutney .
38.keep kulcha , add dollop of nutrailite probiotic butter over it .
39.Takeout the kulcha from the oven , grease it with nutrailite probiotic butter over it ,Crush between palms .
40.Serve hot .
