A very popular recipe.AMERICAN CHOPSUEYIngredients 300 grams noodles, boiled250 grams boneless chicken, cut into thin strips1 tablespoon oil + as required1 inch ginger, finely chopped1 tablespoon chopped garlic1 medium onion, sliced1 small carrot, cut into thin strips4-5 French beans, diagonally sliced1 medium green capsicum, cut into strips¼ cup bean sprouts2 tablespoons tomato ketchup2 teaspoons soy sauceSalt to taste2 teaspoons cornstarch 2 eggsMethod1. Heat 1 tablespoon oil in a non-stick pan. Add ginger and garlic and sauté for 1 minute. Add onion strips and sauté till translucent. 2. Add carrot strips and French beans and sauté for 1 minute. Add chicken strips, mix and cook for 1-2 minutes. 3. Add capsicum strip, mix and cook for 1 minute. Add bean sprouts, mix and cook for 1 minute. 4. Add tomato ketchup and soy sauce and mix. Add salt and 1 cup water, mix and cook for 1-2 minutes. 5. Mix cornstarch in 2-3 tablespoons water to make smooth slurry, add to the chicken mixture, mix and cook till the mixture thickens. 6. To prepare one fried egg, heat 1 teaspoon oil in another non-stick pan. Break an egg, sprinkle some salt and cook from the underside till fully done. 7. Heat 1 teaspoon oil in the same non-stick pan. Spread some noodles and shallow-fry from both sides till golden brown and crisp. 8. Place the fried noodles on a serving platter.
