Fluffy Pancakes

Wet Ingredients
2tbsp/ 30 gms butter
3/4 cup / 177 ml of milk
1 egg
1 1/2 tsp / 7ml of Vanilla essence

Dry Ingredients
1 cup/ 140 gms of flour
2 tbsp/ 30 gms of castor sugar
1/2 tsp / 2.5 gms baking soda
1/2 tsp / pinch of salt
1 tsp/ 5 gms baking powder
Butter for cooking

Method

Take milk in a bowl, add an egg and melted butter in it and whisk it thoroughly, then add vanilla essence or extract and whisk it to completely incorporate it. Take another bowl and flour, castor sugar, baking soda, salt and baking powder and mix all of it together. Now mix the dry ingredients to wet ingredients and mix them well till the time there are no lumps. Your pancake batter is ready.
Now take a flat pan, on a low to medium heat. Add butter to the pan and when the butter starts to bubble, pour in the batter, keep it thick. Once you get large bubbles on the upper side , its time to flip the pancake and let the other side cook. Pancakes are done.

Side of bacon

10 -15 strips of American streaky bacon
Maple syrup ( for caramelisation)

Method:
Take a pan and put in medium flame and add the bacon directly without using any oil or butter. Once they are cooked take them out on an absorbent paper. Now take a clean pan and add some maple syrup to reduce in the pan, when the syrup starts bubbling, add the bacon into the pan.
Saute it in the pan. Once the bacon is covered with the syrup take it out on a plate.

Blueberry jam

Ingredients
1/2 cup of blueberries
1/2 cup / 80 gms of sugar
1/6 cup / 2 tsp of water

Method:
Add fresh blueberries in a saucepan, add sugar and water to the pan. Now keep the pan on a slightly high flame and let the mixture reach the temperature of 105 degrees. Once the mixture reaches this temperature, switch off the gas and check the mixture for soft threads. Take a drop of the mixture after its considerably cooled down between your fingers and try to make soft threads. If threads are formed, its done.

Enjoy your American Breakfast!
