Amaretti | Sanjeev Kapoor Khazana

Popular italian macaroon which is chewy from inside.

AMARETTI

Ingredients

1 egg white
75 grams castor sugar
80 gram almond flour
A pinch of salt
½ teaspoon almond extract
Icing sugar for dusting

Method

1. Preheat oven to 200° C.
2. Put egg white in a bowl, gradually add sugar and whisk the mixture till light and fluffy.
3. Add almond flour, salt and almond extract and fold in the mixture.
4. Shape the mixture into balls, flatten slightly to make amaretti. Arrange them on a baking tray.
5. Put the tray in the preheated oven and bake for 10-12 minutes.
6. Remove from oven, cool down to room temperature, dust with icing sugar and serve immediately.
