Amaranth Pakode ( laal saag ) Prep- 10mins Cooking- 20mins Serving- 4 pax For chutney Ingredients Quantity Coriander 1 bunch Mint 1 bunch Ginger 1 tbsp Green chili 1tbsp Hing 1tsp Aamchur powder 1tsp Salt to taste Water ¼ cup Black salt to taste Chaat masala ½ tsp + sprinkling Lemon ½ tsp For batter Gram flour 1 ½ cup Amaranth seeds ½ cup Amaranth 1 Bunch Red chili powder ½ tsp +for sprinkling Haldi powder ½ tsp Salt to taste Water ½ cup Lg hing ½ tsp Method 1. For chutney , take a mixing jar add coriander leaves, mint leaves, ginger ,chopped green chili, hing , aamchur powder, and grind it, while adding some water in it. 2. Remove it in a bowl add salt to your taste, add black salt, chaat masala and lemon juice and mix it properly. 3. Now take a bowl add besan (gram flour), rajgira (amaranth seeds) ,red chili powder , haldi powder , salt to taste .Now Add water to make batter it should be thick and mix the batter till it gives a nice shine and lastly. 4. Add hing and mix it properly. 5. Keep the batter aside for rest and keep the oil for frying and do preparations for plating. 6. Now separate each amaranth leaves. 7. Now dip each leaves in the batter and put in the oil for frying. 8. First half fry the pakodas and remove them from the gas. 9. Now let the oil get warmer, and then add the half fry pakodas again in it and let it full fry. 10. Now remove the pakoda in the plate and sprinkle red chili powder and chaat masala 11. Serve it with chutney and pakodas are ready to eat.
