Alu Bhujia Sev Namkeen - Potato Sev Recipe - Bikaneri Namkeen Recipe | Nisha Madhulika

Aloo bhujiya is a popular and favorite savory tea time or anytime snack prepared with mashed potatoes mixed in gram flour and spices.

Ingredients

Gram flour- 200 grams (2 cup)
Potatoes - 400 grams (5-6 medium sized)
Salt - add to taste (3/4 tsp)
Turmeric powder - 1/4 tsp
Asafoetida - 2 pinch
Garam masala - 1/2 tsp

Directions

Getting Ready

Pressure cook the potatoes first. Now peel down the potatoes and grate them finely.
Fix the fine net attachment to the sev making machine

Making:

In a mixing bowl, take gram flour and to it add the following ingredients – grated potatoes, salt, asafoetida, turmeric powder, garam masala and mix everything really well making smooth and soft dough.
Cover and keep the dough aside for 15 to 20 minutes to rest.
Grease your hands with some oil. Pinch small size portion from the dough and roll it into long dough ball.
Place this dough ball inside the machine. Close it nicely.
Heat enough oil in a wok or pan. When the oil is medium hot, push the machine’s piston and drop the sev in oil.
Now fey the sev until they get slightly brown in color and crispy. Drain out the fried sev on paper kitchen towels to remove excess oil. Similarly fry the rest.

Serving:

Let the sev cool down completely and then store them in any air tight container and relish eating for up to 1 month.
