Aloo tamatar ki sabzi is an Indian vegetarian recipe made for lunch and dinner. Tomato and potatoes are used to make this aloo tamatar ki sabzi. Serve with roti, paratha or rice. This Indian potato curry recipe is very easy and all the ingredients can be easliy available at home.

Ingredients:
6-7 medium sized boiled potatoes
3 medium sized tomatoes
2 tsp red chilly powder
2 tsp coriander powder
1 tsp Turmeric powder
1 tsp Mango powder
1 tsp Garam masala
2 tsp salt or as per taste
1tsp cumin seed
1 tsp grated ginger
3 tbsp oil
1 tsp Asafoetida
2 tsp Kasuri methi
Freshly chopped coriander leaves
3 tbsp oil
1 piece of dry red chilly (broken into two pieces)
Whole garam masala:
1/2 inch cinnamon sticks
3 pieces of cloves
2 pieces of cardamom
Bay leaf
How to make Aloo Tamatar ki sabji:
Cut boiled potatoes into small pieces and keep aside.
Grate tomatoes to make puree and remove the skin. You can also grind tomatoes to make puree.
Now add red chilly powder, coriander powder, turmeric powder, salt and half of the kasuri methi (keep rest of the kasuri methi aside for further use), mix it well with tomato puree. Tomato paste is ready.
Heat oil in a pan; once the oil becomes hot add whole garam masala and sauté it for few seconds.
Now add cumin seeds and sauté till it becomes light brown.
Now add broken red chilly, asafoetida, grated ginger and sauté it for few seconds.
Now add tomato paste and sauté it on medium flame for 2-3 minutes or till all the spices gets cooked.
Now add cut potatoes, mix it well with the spices and sauté it on medium flame for 2 minutes.
Add little water, mix it well and make medium thick gravy. Add water as per your desired consistency but medium thick gravy tastes better.
Lastly add garam masala, mango powder, and remaining kasuri methi, mix it well again.
Garnish with freshly chopped coriander leaves and serve hot with Roti, Paratha, Puri or Rice.
