Aloo Posto Recipe, a name synonymous with Bengali households, here i have maintained the authenticity of the recipe while keeping a slight tinge of acidity-through lemon, to bring about a good balance of flavors. An easy to cook recipe, that just requires some love to be complete.

The steps are very simple:
1. Soak Poopy Seeds (40 gms) in warm water for an hour.
2. Peel Potatoes(4-5) and cut in small cubes.
3. Add Green Chilies (2) and Turmeric Powder (1/2 tsp) in Poopy Seeds and make a fine paste in the mixer adding a little water.
4. Heat mustard oil (2 tbsp) in a pan, add Asafoetida (1 pinch), and Potatoes. Stir and add Salt (to taste) and Turmeric Powder (1/2 tsp). Now stir fry Potatoes on medium heat till they are golden brown.

Now add Poppy Paste, ½ cup water and Onion Seeds(1/2 tsp), mix properly. Cover and cook on low heat till Potatoes are almost done. Stir occasionally. Do not overcook. Remove from heat when the water level has reduced to 1/3rd.

Add a dash of lemon and serve hot.
