A quick and easy sandwich prepared with boiled potatoes and green peas.

ALOO MATAR SANDWICH

Ingredients

2 large potatoes (aloo), boiled and peeled
½ cup boiled green peas (matar)
8 white bread slices
1 medium onion
1 medium tomato
1½ tbsps ghee
1 tsp cumin seeds
¼ tsp asafoetida (hing)
½ tsp red chilli powder
¼ tsp turmeric powder
½ tsp garam masala powder
Salt to taste
Butter for applying
Green chutney for applying + to serve
Sandwich masala for sprinkling
Tomato ketchup to serve

Method

1. Thinly slice onion and tomato.
2. Heat ghee in a non-stick pan. Add cumin seeds and asafoetida and sauté for a few seconds. Add green chillies and ginger and sauté for a minute.
3. Add green peas, red chilli powder, turmeric powder, garam masala powder and salt and sauté for a minute.
4. Grate the potatoes directly into the pan and mix till well combined.
5. Apply butter on one side of 4 bread slices. Apply some chutney over them and place a portion of the potato mixture over each slice of bread and spread it evenly. Place a few tomato slices and sprinkle some sandwich masala over it. Place a few onion rings and sprinkle sandwich masala over it.
6. Place the remaining slices of bread over them to make sandwiches, apply some butter on top.
7. Heat an electric griller. Place the sandwich on it and grill for 2-3 minutes or till golden.
8. Halve the sandwich and serve hot with tomato ketchup and green chutney.
