Aloo Masala Chaat | Sanjeev Kapoor Khazana

A potato preparation tossed with onion tomato masala served with sev and chopped coriander.

ALOO MASALA CHAAT - (Serves - 4)

Ingredients

2-3 medium potatoes (aloo), boiled, peeled and quartered
1 teaspoon oil
1 teaspoon cumin seeds
1 inch ginger, finely chopped
1-2 green chillies, finely chopped
1 medium tomato, finely chopped
2 teaspoons lemon juice
1 teaspoon red chilli powder
Salt to taste
1 teaspoon cumin powder
1 teaspoon coriander powder
1½ tablespoons chopped fresh coriander leaves
Sev for topping

Method

1. Heat oil in a non-stick pan. Add cumin seeds and sauté till they change colour.
2. Add ginger and sauté for a minute. Add green chillies, mix and sauté for 30 seconds.
3. Add tomato, mix and cook till it turns pulpy. Add lemon juice, chilli powder and salt, mix and sauté for a minute.
4. Add ½ teaspoon cumin powder and ½ teaspoon coriander powder, mix and cook for 2 minutes. Remove from heat and set aside.
5. Take potatoes in a bowl. Add chaat masala, remaining coriander powder, remaining cumin powder and the cooked masala and mix well. Add 1 tablespoon coriander leaves and mix.
6. Transfer the chaat on a serving plate. Top with sev and remaining coriander leaves and serve immediately.
